Cuisine: the success of edible flowers

Nearly 1,600 flowers are edible; however, only about twenty of them are actually of any real culinary interest. Chef Marc Veyrat was one of the first forager cooks. Today, his heirs are numerous.
Flowers are no longer just decorative objects. They are becoming established in some online stores to be eaten. What if edible flowers became the food of tomorrow? Dandelion, lilac, chrysanthemums, acacias, more than 1,500 flowers can be eaten. They must be washed well and, above all, well informed to avoid any poisoning. Since Covid, Mathilde Perrichon, a farmer-herbalist, has seen a real trend emerging: “For several years, there has been a real appetite for knowing plants, for knowing how to identify them and how to use them,” she assured.
In western France, an entire industry is even beginning to take shape. Some fifteen edible flower producers have joined forces over the past five years. The network is growing, in particular, thanks to direct sales. The producers' goal is to counter the massive imports from abroad.
