Haute-Loire. At the foot of the Puy-en-Velay cathedral, chef Montellimard aims ever higher

This Thursday morning in Le Puy-en-Velay, Guillaume Montellimard is getting ready to head into the kitchen. "I have three large cods to prepare. After that, I'll take care of the evening's side dishes." The chef of the restaurant Les Flâneurs grew up in Saint-Hostien. But before taking the piano on Rue Séguret, he practiced his skills far from Haute-Loire. "For a chef, I think it's important to travel. It opens the door."
After studying in Bastia, Guillaume Montellimard spent a season at Georges Blanc in the Ain region before heading to Bordeaux. On the banks of the Garonne, he worked in one of Gordon Ramsay's restaurants, among other places, before flying to Scotland and Number One, a Michelin-starred restaurant in the city of Edinburgh.
