Zucchini in the air fryer: breaded, crispy and wheat-free

WHEAT-FREE BREADED ZUCCHINI IN THE AIRFRYER

A zucchini breaded with corn flour, without wheat, golden, crispy, even without oil and without frying

Recipe for 2 people.

Classic (no restrictions), Gluten Free, Vegetarian

UTENSILS

1 grater (optional), 1 cutting board(s), 2 deep plate(s) or bowl(s), 1 sieve(s) (optional)

cup = 240ml, tablespoon = 15ml, teaspoon = 10ml, coffee spoon = 5ml

Ingredients for MILANESA WITHOUT WHEAT IN THE AIRFRYER: - 1 egg unit(s) diluted in a little filtered water, or enough.

- 1/2 cup(s) (tea) of corn flour, or enough for breading.

- salt to taste (pinch)

- 1/4 cup(s) (tea) of grated Parmesan cheese.

Ingredients ZUCCHINI: - 1 unit(s) zucchini, medium

- salt to taste

PRE-PREPARATION:

  1. Separate the ingredients and utensils for the recipe.
  2. If you prefer a more delicate coating, sift the cornmeal to make it finer.
  3. If you don't buy already grated Parmesan cheese, grate it on the fine side of the grater.
PREPARATION:

Zucchini:

  1. Wash and dry the zucchini(s).
  2. On a cutting board, cut it into slices of about 0.5 cm.
  3. Add salt, mix and set aside.

Breaded Zucchini without Wheat in the Airfryer - Breading:

  1. Preheat the Airfryer to 190°C.
  2. Beat the egg(s) with a little salt and water in a deep dish.
  3. Place the corn flour and grated parmesan cheese in another deep dish and mix.
  4. Dry the zucchini(s) with a paper towel.
  5. Lightly coat the slices in cornmeal and parmesan cheese and shake off any excess.
  6. Then dip each slice in the beaten egg(s) and drain.
  7. Finally, coat them again in the corn flour with cheese and press well so that they are well coated.

Wheat-Free Breaded Zucchini in the Airfryer - Baking:

  1. Arrange the breaded slices in the Airfryer basket, without overlapping, leaving space between them for air to circulate - depending on the number of slices, bake in batches.
  2. Place the basket in the drawer and insert it into the equipment preheated to 190ºC.
  3. Close the Airfryer drawer and bake for about 20 minutes, until golden brown - this time depends on the power of your equipment.
  4. Remove the drawer from the airfryer.
FINALIZATION AND ASSEMBLY:

  1. Arrange the wheat-free breaded zucchini prepared in the Airfryer on a serving dish, or if you prefer, distribute it directly on plates as a side dish.
  2. They are also great served as a snack.
